Cherry chocolate muffins

Muffins for breakfast...YES! Today we are sharing a recipe for these protein cherry chocolate muffins and 1 thing is for sure..... They are delicious! With just a few ingredients you can put these muffins on the table. Enjoy!

Ingredients (10 small muffins)

  • 120 ml (vegetable) butter
  • 2 eggs
  • 250 ml (soy) yoghurt cherry flavor
  • 150 grams spelt flour + 1 tbsp for the cherries
  • 100 grams oatmeal
  • 120 grams light brown caster sugar + 1 tbsp for sprinkling
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 200 grams (frozen) cherries
  • 3 scoops Ekopura vegan protein vanilla
  • Pieces of dark chocolate
  • Extra requirements: muffin baking tin + paper baking cups

Preparation

  1. Preheat the oven to 175 ºC and line a muffin baking tin for 10 muffins with paper baking cups.
  2. Melt the butter in a saucepan on the stove or in the microwave and then let it cool slightly. Beat the eggs in a batter bowl and add in the yogurt and melted butter. Mix well.
  3. Add flour, oatmeal, caster sugar, baking powder, Ekopura, cinnamon and salt to the bowl and mix together. Not too long, but just long enough to mix everything well.
  4. Keep 12 cherries aside and cut the rest into quarters. Add the retained tablespoon of spelt flour to the sliced cherries and stir well so that the cherry pieces are well coated with flour. Carefully spoon the cherry pieces into the batter. Then spoon in the chocolate pieces.
  5. Divide the batter among the muffin tins, then prick a cherry in the center of each muffin. Sprinkle with the remaining sugar.
  6. Bake for about 30 minutes at 175ºC.
